The
Enmore Estate in Guyana dates back to 1840 but as the industry has
changed over the years so the Enmore Stills have moved to new
locations.
Now part of Demerara Distillers’ operation based at Diamond
Distillery in Georgetown, the Enmore Stills are busy producing their
unique style of rums.
A
pot still is in production today while the famous wooden patent
still built by John Dore & Co in 1880 is being re-constructed to
produce its unique style of rum.
Our example, which was distilled in 1988 on the pot still, is
a classic example of fine Demerara Rum.
Matured only in used American Bourbon casks its pale golden
colour is unusual for a 20 year old rum.
Light in colour but full in nose, deep fruit, burnt sugar and
high wood tones give a clear cut introduction to a dry deep palate
with toasted spice notes, firm spirit and a well controlled flavour
profile, good weight and long dry aftertaste.
A
fine rum, not to everybody’s taste, but a true example of the
individual distiller’s art.
Enjoy this quietly over a glass full of ice and savour the
true Demerara.
